The Curse of the Lemon Tree

So much for my plans for loosing weight.  But I swear it is not my fault.  We have a lemon tree in the backyard and I have been looking for ways to use the lemons.  Last week I made lemon bars for the first time.  They were so good we ate the entire pan.  In one sitting.  All 2000 calories.  And I can't blame my husband because I fought him for the last one.  Since then I have made them almost every day.  I will come home from work and my husband will have the lemons juiced, zested, and the butter softened.  "Please, honey. Will you make me some of those delicious lemon squares?"  How can I resist that?  I have gotten better at not eating as many, but those bars call to me in the middle of the night.  But, February is a new month and I hope to start fresh (again) and eat healthier.  

I sure hope that tree stops producing fruit.

  1. This made me smile! Popcorn is my latest downfall. I hot air pop it, use olive oil and veggie topping, but still....if I make a large bowlful, I eat almost everything--after I give some to my daughter; but she has more control than I do and eats half the amount as I. Oh, but lemon bars bars sound absolutely delicious! Maybe the tree WILL stop producing. But meanwhile, maybe just enjoy the bars, cautiously.

  2. The way I see it - lemon is a fruit (or veg?) but whatever - they are very good for you and full of vitamin C and are next to zero calories!! So yay for you and your lemon bars!!!

  3. That's what my husband says, "I don't gain weight on these. They have fruit in them." Me on the other hand, I should eat more popcorn.
